Pudding for breakfast?  I’m in!

Chia seeds are high in Omega-3 fatty acids and when mixed with liquid, create a jelly like “pudding” and can be a healthy alternative to processed sugary cereals for breakfast, topped with fresh fruit.  The coconut or almond milk, chia seeds, and almonds all contain protein and healthy fats.  Of course, the fresh fruit provides fiber, vitamins, and healthy anti-oxidants that help fight free radicals that cause oxidative stress in the body.

Just a note when you shop, look for organic strawberries, as conventional strawberries are grown with a heavy pesticide load according to the Environmental Working Group’s Clean Fifteen and Dirty Dozen produce lists.

Strawberry Banana Chia Pudding

Serves: 2

Ingredients:

1 cup plain coconut milk (unsweetened, from the carton, or almond milk)

¼ cup chia seeds

½ cup strawberries (fresh or frozen; chopped)

½ banana (sliced)

¼ cup slivered almonds

Directions:

  1. Combine the milk and chia seeds in a jar, or container with a lid. Refrigerate for at least three hours or until chia seeds have set and pudding has chilled.
  2. To serve, stir well and top with strawberries, banana, and slivered almonds. Enjoy!
